Healthy Collagen Brownies (Gluten-Free & Low Sugar)

Ingredients
Makes: 12 squares
Preheat oven: 170–180°C
Equipment: 2 small brownie trays or one large parchment-lined tray
Dry Ingredients:

2 cups gluten-free plain flour (Buckwheat, Rice, Corn Flour, Potato, or Tapioca Starch)

2 tablespoons Correxiko Marine Collagen Powder

½ cup cocoa powder or instant hot chocolate powder
-
1 teaspoon baking powder
-
1 teaspoon salt
-
½ cup chopped deseeded dates
-
½ cup chopped deseeded prunes
-
2 x 200g bars of chocolate (melted in a saucepan)
Wet Ingredients:
In a bowl, mix:

1 cup water
-
½ cup clear honey
-
1/3 cup milk of your choice
-
½ cup + 2 tablespoons rapeseed oil
-
2 tablespoons vanilla essence
Method

Preheat oven to 170–180°C and line your tray(s) with parchment paper.

Melt the chocolate gently in a saucepan over low heat, then remove from heat.

Whisk in the wet ingredients until combined.

Add in the dry ingredients and mix thoroughly. The mixture will be runny – trust the process!

Pour evenly into your baking tray(s).

Bake for 40–50 minutes until firm and golden brown.

Allow to cool, then cut into squares.

Decorate if desired — or enjoy as they are!
