Healthy Collagen Brownies (Gluten-Free & Low Sugar)

Ingredients

Makes: 12 squares
Preheat oven: 170–180°C
Equipment: 2 small brownie trays or one large parchment-lined tray

Dry Ingredients:

  • 2 cups gluten-free plain flour (Buckwheat, Rice, Corn Flour, Potato, or Tapioca Starch)

  • 2 tablespoons Correxiko Marine Collagen Powder

  • ½ cup cocoa powder or instant hot chocolate powder

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • ½ cup chopped deseeded dates

  • ½ cup chopped deseeded prunes

  • 2 x 200g bars of chocolate (melted in a saucepan)

Wet Ingredients:

In a bowl, mix:

  • 1 cup water

  • ½ cup clear honey

  • 1/3 cup milk of your choice

  • ½ cup + 2 tablespoons rapeseed oil

  • 2 tablespoons vanilla essence

 


 

Method

  1. Preheat oven to 170–180°C and line your tray(s) with parchment paper.

  2. Melt the chocolate gently in a saucepan over low heat, then remove from heat.

  3. Whisk in the wet ingredients until combined.

  4. Add in the dry ingredients and mix thoroughly. The mixture will be runny – trust the process!

  5. Pour evenly into your baking tray(s).

  6. Bake for 40–50 minutes until firm and golden brown.

  7. Allow to cool, then cut into squares.

  8. Decorate if desired — or enjoy as they are!
